I don’t know about you but I always look forward to fall around this time of year. We’re in August now and I’m just kind of over summer at this point. Don’t get me wrong, I LOVE the summertime but I just feel like I’ve enjoyed it as much as I’m going to and I’m ready for the cooler weather, foliage colors, big sweaters and of course.. pumpkin everything. Sometimes a chocolate craving hits you so hard you drop everything to go make the most chocolately (not a word, I know) muffins you can think of while still trying to keep them healthy. So that was honestly the inspiration behind this recipe.. a really severe chocolate craving. These are basically banana chocolate chip muffins but with cocoa powder for extra chocolately goodness. Well hello there… I know it’s been a while since you’ve heard from me! I think the last thing I posted about was how we were leaving for Iceland and that I was so excited to share our experience and awesome pictures.. and then I just left you hanging! How rude of me. I don’t know why but I just felt like I needed to take a break. I found myself struggling to find inspiration and come up with recipes. Instead of being super pumped to write up a post I kind of started to dread it a bit. I am loving this warmer weather! Spring has officially sprung and I couldn’t be happier. I’ve been craving lots of fruit lately since it started warming up. This dessert is perfect for the transition from winter to spring. It’s kind of like a cobbler which is perfect for when it’s chilly outside but the tartness from the strawberries screams summer.

I’ve been trying to incorporate more vegetarian meals in our diet. It’s actually pretty challenging to come up with ideas since there are so many options with meat. I really like black bean burgers, but it has to be one that’s made really well. None of those frozen things. There’s a local restaurant here called Sesame and they’re actually known for their beef and elk burgers but they also happen to make a killer black bean burger. They have an option where you can get it over greens as a salad and they have super yummy toppings. The last time I was there I had it topped with goat cheese and sauteed mushrooms. Yea, its pretty awesome. That meal is actually what gave me the idea to make them myself but I wanted to try a southwestern version. The creamy guacamole pairs perfectly with the slightly spicy flavor of the burgers.

Are you tired of muffins yet? I should probably lay off on all of the muffin recipes but it’s just so hard because they’re so fun (and easy) to make! And I’ll just be honest and admit that I just really love muffins. I also love making them with ripe bananas because you don’t really need to add much sweetener since the bananas give off so much of the sweetness. I thought it would taste weird to combine banana and blueberries in a muffin but it actually is a great combination. My favorite go-to muffin is banana chocolate chip but in an effort to be healthier I reached for the fruit instead. The toasted walnuts really add great flavor as well. So overall just a really yummy muffin!

This is by far my favorite salad that I make at home. I’m not even kidding when I say that I’ve eaten it multiple times a week for the past few weeks. I probably could eat it every day. Also, I recently found out that it pairs perfectly with a glass of chilled chardonnay.

I realized that lately I’ve been eating a lot of kale. It probably has something to do with the fact that we buy a huge bag of it from Costco so I basically feel forced to consume it with every meal so we eat it all before it goes bad. But that definitely isn’t a bad thing and it’s fun to think of ways to incorporate it into my meals. For example, this morning I made a smoothie bowl for breakfast and added kale to my smoothie. For lunch, I made a tossed salad with it and for dinner, you guessed it, this kale almond cheese concoction.

I am kinda into these warmer temperatures we’ve had lately. While part of me is super excited to have mid-70s weather in the middle of February but the other part of me is like wait… this is not normal. Yea, you know cause of the whole global warming crisis.. we’re still worried about that right? It feels like nobody is really talking about it that much these days when it used to be a huge concern a while back. Who knows.
