No, this is not a healthy recipe and it’s not my recipe either.. I’m willing to admit that even though I wish I would have come up with it! This is actually a recipe I found on another blog so I’m going to give her the credit. The blog is Six Sisters Stuff and you can click here to see the actual recipe for the Mini Eggnog Cupcakes on their blog. Since it’s the holidays and I thought these cupcakes were the best thing ever, I just had to share it. So I’m calling this a “Christmas Cheat Day Recipe”. Because even though our diets might be super clean and healthy most of the time, you just have to eat a few sweets around the holidays (or at least I do). Posting this recipe actually prompted me to think about the idea of posting ‘cheat day’ recipes every now and then. 90% of the time I am whipping up healthy recipes but there are those handful of times where I’m making something for a special occasion that I’d really like to share. And I think we all could appreciate a little indulgence every now and then. So if you think that’s a good idea, drop a comment letting me know whether you’d like for me to do that or if you really don’t think it’s a good idea then feel free to say that too. I love feedback, good or bad! I made these for a Christmas party last weekend and I was extremely pleased with how they turned out. If you’re looking for a very unique, delicious and EASY dessert to make for Christmas this year, this is it!
I still can’t believe it’ll be Christmas in two days. I feel like this year has completely flown by and boy what a year it has been! My husband and I were driving up to Charlotte last weekend so we had a lot of free time for conversation. We decided to reflect back on 2016 and all the things we did this year. Biggest thing being the purchase of our first home! If you told me two years ago I would be buying a house in Charleston in 2016 I would have laughed at you. It’s crazy how things work out. We just feel so blessed to be able to live in such a great place and have great jobs that allow us to put a roof over our heads and food on the table, among many other things. It’s very easy to take for granted the smallest things but it has been my goal to be very mindful of every little thing I have and to not ever lose sight of how fortunate we are.
Ok, I got really deep there.. Sorry. But I just find myself thinking about these things as the year comes to a close. Especially when everyone’s rushing around to buy gifts and all of the material things that come along with the holiday season. It reminds me to not get caught up in all of that. Sure, I bought gifts for friends and family and put time and effort into picking them out. But I know that they know that is not what Christmas is all about. I just really enjoy picking out that one gift that I think a person would like and seeing them open it. The biggest thing I look forward to on Christmas day is getting to see all of my family all in the very same day. I am fortunate that most of my family and Nathan’s immediate family lives in the same area so that this is possible. I think I will enjoy Christmas even more when we have kids. The excitement that children feel around the holidays is a kind of excitement that can’t be topped. And no, I don’t want it to be excitement about presents, and I know as parents we will strive to keep it that way. I think we are most excited to do things with our children like decorate the tree, watch Christmas movies, bake cookies, build a gingerbread house, spend time with family, and other fun Christmas traditions we will come up with as a little family. And no, I’m not pregnant so don’t start those thoughts, just thinking about the future and getting excited about it.
Anyway, that was a really deep post. Sorry if that was too much. I just started typing and it all just came flowing out almost like I couldn’t even stop it. I think that’s something I really like about blogging I’m finding. It’s almost like a journal where I can express my thoughts and what’s been going on in this brain of mine. Although, it’s probably important that my readers are interested in what I’m saying.. so I hope you are! So along with appreciating time with family this Christmas, you should also whip up these little cupcakes. They are SO easy since you use a box cake mix and they would be fun to make on Christmas Eve. So with that said, I hope you have the Merriest Christmas!!!
- 16 oz box of white cake mix
- 1 1/4 cups egg nong
- 2 eggs
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1/2 cup butter, softened
- 1/4 cup egg nong
- 1 teaspoon vanilla
- 1/2 teaspoon ground nutmeg
- 3-4 cups powdered sugar (or until you reach desired consistency)
- Preheat oven to 350 degrees.
- Fill a mini cupcake pan with mini paper liners or spray pan with nonstick cooking spray.
- In a large bowl, combine cake mix, egg nog, eggs, nutmeg and vanilla. Mix together until combined.
- Pour batter into each mini cupcake, about 2/3 of the way full.
- Bake 8-10 minutes or until barely golden brown.
- Remove from oven and let cool completely.
- In a large bowl, cream together the butter, egg nog, vanilla and nutmeg.
- Mix in the powdered sugar one cup at a time.
- I set the frosting in the fridge for about 30 minutes to let it thicken up more to make the piped frosting look better.
- You can either use a piping bag and attachment to pipe the frosting on top of the cupcakes or use a knife to spread it.

Cal loves eggnog, so I will definitely have to make these for him sometime. And you know me… But I love getting to hear your genuine heart, so thanks for sharing. I think lots of people love to “meet” someone who is really authentic, and sharing your true self like this is exactly what will make what you write stand out.
