Happy New Year!!!
I hope the first few days of 2017 have been great to you so far! If you read my last post I talked a little bit about our NYE plans. Well if you’re wondering, the fried turkey was a success! And oh the relief we felt. We were pretty nervous about it because it was our first time cooking a whole turkey (which is always intimidating) and also because it was our first time using the infrared fryer we bought. I have to say it’s a bit risky to decide to throw a dinner party where you’re cooking something you’ve never cooked before using a piece of equipment you’ve never used before to cook it.. but I had full faith in us and we pulled through! I also made the traditional New Year’s sides like collards, black eyed peas (with brown rice), cornbread and I also added in mashed potatoes. A true southern feast! I think this might be a new tradition. Bringing in the new year with really good friends eating really good food and having a really good time.. nothing beats that.
We spent the first day of the new year tackling a few house projects that we’ve been meaning to get to for a while now. It’s an amazing feeling to finally finish those little projects you’ve been putting off for so long. We bought our house back in May and have been tackling house ‘update’ projects ever since. It was built in 2004 so definitely not that old but we just felt it needed a few cosmetic updates. Once we are completely finished (if that day will ever come) I am going to share all of the before and after pictures. That will be a truly satisfying moment to see all that all of our hard work paid off! Because I also should add that we have done everything ourselves.. we have yet to hire anyone to do anything and we’d like to keep it that way if possible. It just makes it that much better in the end, I think!
You know what we also did on the first day of the new year? We booked a 7 day trip to Iceland!!! And we did it pretty spontaneously. My husband, okay I’m just going to call him by is name from now on because it just feels weird to keep saying “my husband” sound ok to you? Anyway, Nathan is sooo not the spontaneous type so this makes it that much better. He likes to plan things way in advance and figure every detail out before we make any decisions. I’m not saying that like it’s a bad thing because I am extremely appreciate of his mindset and the way he goes about things. Me on the other hand, I’m pretty comfortable with spontaneity. I’m not saying I would pack up my bags and leave the country tomorrow or anything but I don’t necessarily feel the need to fully understand everything before I do it. That sounds like I’m irresponsible.. Obviously with huge decisions I definitely do my research and think things through but with a trip for example, I find it extremely exciting to just book something and go. And with other things that I know aren’t a huge deal, I don’t really dig too deep if I don’t feel the need. It also just adds stress for me. It doesn’t stress him out to analyze things, I think he actually enjoys it so it works out perfect for our relationship actually! So the fact that we first brought up Iceland a few weeks ago and we’re now going in 4 months is just crazy. I am so proud of Nathan for his spontaneous spirit he all of the sudden gained! You have no idea how excited I am. I have been wanting to go out of the country and explore a completely unfamiliar place and this just seems like the perfect place to do that. Whew, I’m talking.. err typing a lot. I should probably get to the food. Let me just say that I really really like this dish. It’s the best of everything. Delicious, easy, requires one dish (best reason), and of course, super healthy! I was actually pretty surprised with how good this one turned out. You’d think a dish with just sweet potatoes, ground turkey and kale would be pretty bland but it is far from that. I’m convinced that the rosemary is to thank for the delicious depth of flavor. I also love this dish because it’s one you can make a big batch of on Sunday evening and use it for lunches the rest of the week. It tastes just as good reheated as it does right off the skillet. When I served this for Nathan and I for dinner I actually topped it with an over-easy friend egg as well as some sliced avocado. I definitely recommend you do that, it adds a lot to the dish, not to mention more protein.

- 2 tablespoons oil (olive, coconut, avocado..)
- 2 cloves garlic, minced
- 1/2 of a yellow onion, finely chopped
- 1 lb ground turkey
- 2 small sweet potatoes, peeled and diced
- 2 tablespoons fresh rosemary, chopped
- 1/2 teaspoon crushed red pepper
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 cups kale, stems removed and broken into smaller pieces
- 1/2 cup shredded mozzarella cheese, optional
- Heat oil in skillet over medium heat and add in garlic and onion. Cook for 2-3 minutes.
- Add the turkey to the skillet and continue to cook and break apart the meat. Cook until meat is done, about 10 minutes.
- Add in sweet potato, 1 tablespoon of the rosemary, crushed red pepper and salt and pepper.
- Cover skillet with lid and cook on medium-low for 10-15 minutes or until potatoes soften.
- Add in the kale and cook until the kale softens, should be a few minutes.
- Lastly, top with mozzarella and remaining tablespoon of rosemary.

This looks really good! I’ve never had sweet potato with anything that wasn’t “sweet,” so this freaks out my ‘things that shouldn’t go together’ sensibilities LOL! I should really push myself and try this.
