Spaghetti squash is like the best thing ever. I remember the first time I tried it and I knew that moment that I was hooked. It’s very rich and starchy so it’s a perfect replacement for pasta. Something I make on a regular basis for dinner is turkey meatballs with spaghetti squash. Even though it’s probably one of the easiest meals I’ve made it’s definitely one of the best ones. You can basically just throw together what you have in the fridge with some spaghetti squash and chances are it will turn out awesome. It’s not even Monday and I’m already thinking about this upcoming weekend. Wanna know why?? Because we’re spending it in Savannah, Georgia! I love Savannah for the same reasons I love Charleston.. good food (top priority), beautiful scenery, and of course the undeniable southern charm. This weekend getaway is actually my Christmas present from Nathan. I’ve decided recently that instead of spending money on things we don’t need I’d like for us to start using that money to take more trips instead. I’m getting to the point in my life where I just want to experience things and see new places. A new handbag just doesn’t give me the same enjoyment anymore.. and I’m glad! Because life isn’t about the nice things you have but rather the things you experience with the people you love. Those are the kinds of memories that I want to make. So for Christmas I just said that the best gift he could give me would be to book a weekend getaway for just the two of us and I’m so glad he picked Savannah!
Is it bad that the biggest thing I’m looking forward to is the food? I say this because we booked a culinary tour where we’ll get to try the food at a handful of the most popular restaurants in the city. So as you can understand, I’m super excited. Do you have a favorite restaurant in Savannah?? We haven’t made dinner reservations anywhere (mostly because I feel like all the food from the tour will be enough for the whole weekend!) but would still love to try out some places while we’re visiting so if you have recommendations please send them my way!
- 1 large spaghetti squash
- olive oil
- salt and pepper
- 1 container cherry tomatoes
- 3-4 tablespoons pesto (store bought or homemade)
- 2 tbsp fresh basil, chopped
- grated parmesan cheese (optional)
- Preheat oven to 400 degrees.
- Cut the squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the squash and sprinkle with salt and pepper.
- Place the squash in the oven and set the timer to 40 minutes.
- While the squash is cooking, place the cherry tomatoes in a pan and drizzle with olive oil and salt.
- Place the tomatoes in the oven with the squash when the timer reaches 20 minutes. Cook the tomatoes and squash together in the oven for those remaining 20 minutes.
- Allow the squash to cool all the way and then use a fork to scrape the flesh of the squash and place into a large bowl or dish.
- Add the pesto to the squash and mix well. Top with the roasted tomatoes, basil and parmesan.
