I debated whether or not to post this. Because, well.. it’s a fairly basic smoothie. I’m pretty sure we all know how to make a smoothie nowadays. Just throw a bunch of different stuff in a blender and there you have it. But this is like my favorite green smoothie that I make almost every morning now. And since I like it so much I just figured I’d go ahead and share it in case anyone else was in search of a solid smoothie recipe. You can obviously change out the fruit and mix it up however you like but I usually stick to the same stuff every morning. It just tastes that good.
But do you really wanna know why I’m posting this smoothie recipe? Can I get really honest with you? It’s because I couldn’t post the recipe that I originally wanted to.. Well technically I could have posted it but since I’m a semi-perfectionist I didn’t think the photography looked that great. Which is super frustrating because it was an awesome recipe.. and something I was super excited to share. But I guess it’s not so bad because I have to make it again now (and take better photos this time) which means I get to eat it again.
So I guess I’ll go ahead and tell you what the recipe is in case you’re dying to know. It’s pork tenderloin with sweet potatoes, apples and brussel sprouts with a maple dijon glaze. Sounds awesome, right?! I was pretty pleased with how it turned out because I never cook pork, like ever. The best part about it is it’s a one-dish meal so you can just throw everything in one dish and put it in the oven.
The reason the photography didn’t look so great was because if you didn’t know this already, a cooked pork tenderloin in it’s whole state just isn’t really that pretty.. like it just looks weird. A big, awkward shaped piece of meat. I was thinking this as I was taking the pictures but figured it wouldn’t be that bad. Then I pulled them up in on my laptop screen. I was right, not pretty. Then it occurred to me that I should have sliced the tenderloin first and then photographed it.. but of course it was too late at that point.
Anyway, you probably didn’t need to hear that very detailed excuse of why I didn’t post that recipe. But now you know the correct way to photograph a pork tenderloin, in case you’re ever in that situation.
Something I’d like to start doing is asking you all what kind of recipes you’d like to see. I can only guess (based off my own thoughts and opinions) but it would be even better to hear it straight from you! I’m starting to notice that the one-dish meals are very popular. Which makes obvious sense.. I think we all can appreciate a meal that is easy to put together and only requires us to clean one dish! So I’m definitely going to try to work on more of those recipes. But if you are dying to see more of a certain type of recipe, please let me know!
- 1/2 cup frozen tropical fruit (I use a blend of pineapple, mango and strawberries)
- 1 banana, sliced
- 1/2 cup raw spinach
- 1 teaspoon peanut or almond butter
- 1 cup unsweetened almond milk
- 1 tsp chia seeds (optional)
- 1/4 cup granola (I REALLY like Viki's Granola brand)
- Place first 6 ingredients (frozen fruit on bottom) in a blender and blend until smooth.
- Pour into a glass and top with granola.
