Is it really Wednesday already? This week has completely flown by and I find myself laying in bed trying to get this post done before I go to sleep tonight because I just realized what day it was.. that’s the kind of week it’s been. I was in Florida for the past 6 days with a bunch of friends for the Disney World Marathon. It was a blast!!! If you read my last post I talked about how I was nervous to run the half marathon because I hadn’t trained one bit. I actually did much better then I expected! All I know is I’m glad it’s over and I kicked butt! A majority of the group ran the full marathon and it was their first one. I’d love to run a full marathon some day but I think I just need to get over the mental aspect of it. I mean 26.2 miles?! That’s far. That’s even a far drive in my car!

Are you like me and have a hard time figuring out what to eat in the morning? If you read my recent post on the pomegranate smoothie, I talked about how I am trying to focus on healthy, easy breakfast recipes. I think breakfast can be challenging one because not all of us have the extra time if takes to put together a decent breakfast every morning. Most mornings when I’m in a rush I end up reaching for a protein bar because it’s quick and gets the job done. Which is fine, but not protein bars aren’t really full of all the nutritious stuff (except protein, of course) I should consume to start my day and I usually find myself hungry not long after.

I hope the first few days of 2017 have been great to you so far! If you read my last post I talked a little bit about our NYE plans. Well if you’re wondering, the fried turkey was a success! And oh the relief we felt. We were pretty nervous about it because it was our first time cooking a whole turkey (which is always intimidating) and also because it was our first time using the infrared fryer we bought. I have to say it’s a bit risky to decide to throw a dinner party where you’re cooking something you’ve never cooked before using a piece of equipment you’ve never used before to cook it.. but I had full faith in us and we pulled through! I also made the traditional New Year’s sides like collards, black eyed peas (with brown rice), cornbread and I also added in mashed potatoes. A true southern feast! I think this might be a new tradition. Bringing in the new year with really good friends eating really good food and having a really good time.. nothing beats that.

Tropical Pomegranate Smoothie
I have seriously been missing out. Howecome nobody ever told me that pomegranates are like the best thing ever?! What’s funny is that the day I made this smoothie was the first time I even tried pomegranate. Want to hear something even funnier? I told my husband that I was excited to try pomegranate for the first time and his response – “I don’t really like them because it seems like there’s not much left to eat once you remove all of the seeds.” I laughed pretty hard.. since the seeds are what you actually eat! I love the tangy flavor, it reminds me of cranberries but a little sweeter.
Italian Stuffed Zucchini Boats
Well, the holidays are officially over and it’s time to start cleaning up the diet again. Every single year I tell myself this will be the Christmas where I turn down sweets all together. It never happens, not even close. I said this in my prior post but I’ll emphasize again just how much of a sweets person I am. You can give me salads for dinner every single night if that means I’m getting a piece of chocolate after. So with the holidays it’s not really the meals that get me in trouble as much as it is the delicious baked cookies and cakes that are always available and ready to be eaten. My mom actually packed us up a box full of different cookies to take back home with us and we just decided tonight to throw them away because both my husband and I know that we don’t have the best self control when it comes to that stuff. So our strategy to not eating sweets and other bad things is to not buy it and not have it around the house. It’s worked pretty well for us so far! Until I get an undeniable chocolate chip cookie craving.. and all bets are off. But luckily that doesn’t happen too often.
Mini Eggnog Cupcakes
No, this is not a healthy recipe and it’s not my recipe either.. I’m willing to admit that even though I wish I would have come up with it! This is actually a recipe I found on another blog so I’m going to give her the credit. The blog is Six Sisters Stuff and you can click here to see the actual recipe for the Mini Eggnog Cupcakes on their blog. Since it’s the holidays and I thought these cupcakes were the best thing ever, I just had to share it. So I’m calling this a “Christmas Cheat Day Recipe”. Because even though our diets might be super clean and healthy most of the time, you just have to eat a few sweets around the holidays (or at least I do). Posting this recipe actually prompted me to think about the idea of posting ‘cheat day’ recipes every now and then. 90% of the time I am whipping up healthy recipes but there are those handful of times where I’m making something for a special occasion that I’d really like to share. And I think we all could appreciate a little indulgence every now and then. So if you think that’s a good idea, drop a comment letting me know whether you’d like for me to do that or if you really don’t think it’s a good idea then feel free to say that too. I love feedback, good or bad! I made these for a Christmas party last weekend and I was extremely pleased with how they turned out. Peanut Butter Black Bean Brownies
First of all, I feel like I should confess that while I’m typing this post, I’m also watching National Lampoon’s Christmas Vacation. It’s just one of those Christmas movies that I have to watch every year along with A Christmas Story, Elf and The Grinch. I’m typically not a huge movie person but when it comes to Christmas movies, I could watch them all day.
Southwestern Chicken Quinoa Soup
This is by far one of my favorite recipes. Not only because it’s delicious but because it’s incredibly easy to make, it’s cost effective and it’s perfect for meal prepping! This recipe makes a very large amount but the good thing is it tastes just as good reheated which makes it perfect for lunches throughout the week! This is a hearty soup that is packed with flavor and is ideal for these chilly nights. Speaking of chillier nights, I’m hoping for cooler temperatures here in Charleston soon.. the weather hasn’t really decided what it wants to do. Just before Thanksgiving it was starting to cool down to the low 60’s during the day and it was PERFECT. This week it’s decided it wants to go back up in the high 70’s.. just as I finished decorating for Christmas. I am totally a sweater weather person around the holidays. Something about it being T-shirt weather when Christmas music is playing just bothers me.
Paleo Pumpkin Pie
I realize this blog post is long overdue.. and I apologize. My goal is to post a new recipe once a week but sometimes life gets the best of me and I can’t seem to find the time! Actually, I tried to finish this post a few days ago but the squarespace site was having issues so I’m just going to blame it on that.. With that being said, I’m making it a solid goal of mine to make sure I post at least once a week if not more. I’m still getting the hang of this whole blogging thing so cut me some slack will ya! Just kidding I think I give myself a harder time than anyone else does.

So I really tried to come up with a shorter, catchier name for this dish but just couldn’t do it. So Spaghetti Squash with Chicken Sausage, Spinach and Sundried Tomatoes it is..
