I don’t know about you but I always look forward to fall around this time of year. We’re in August now and I’m just kind of over summer at this point. Don’t get me wrong, I LOVE the summertime but I just feel like I’ve enjoyed it as much as I’m going to and I’m ready for the cooler weather, foliage colors, big sweaters and of course.. pumpkin everything. Greek Falafel Salad with Lemon Tahini Dressing

Well hello there… I know it’s been a while since you’ve heard from me! I think the last thing I posted about was how we were leaving for Iceland and that I was so excited to share our experience and awesome pictures.. and then I just left you hanging! How rude of me. I don’t know why but I just felt like I needed to take a break. I found myself struggling to find inspiration and come up with recipes. Instead of being super pumped to write up a post I kind of started to dread it a bit. I hate saying that because I shouldn’t dread doing something I’m truly passionate about something in me was just getting kind of burned out.

Spicy Southwestern Black Bean Burgers

I’ve been trying to incorporate more vegetarian meals in our diet. It’s actually pretty challenging to come up with ideas since there are so many options with meat. I really like black bean burgers, but it has to be one that’s made really well. None of those frozen things. There’s a local restaurant here called Sesame and they’re actually known for their beef and elk burgers but they also happen to make a killer black bean burger. They have an option where you can get it over greens as a salad and they have super yummy toppings. The last time I was there I had it topped with goat cheese and sauteed mushrooms. Yea, its pretty awesome. That meal is actually what gave me the idea to make them myself but I wanted to try a southwestern version. The creamy guacamole pairs perfectly with the slightly spicy flavor of the burgers.

Arrabbiata Lentil Pasta with Chicken Sausage and Kale

Please tell me I’m not the only one that completely stuffed their face last night.. And when I say stuff my face I mean I could not even control myself. I was like an unsupervised kid in a candy store. I think it’s because I’ve been so good lately and have been really trying to be stricter on myself in what I eat. I told myself that last night would be my cheat meal and that I deserved it. And I took FULL advantage of it. But thats okay. It was back to the grind this morning and I was fully okay with it.

Chicken Caprese Salad

I’m currently writing this post on the drive down to Savannah (SO excited for our weekend getaway) but doing this in the car is not easy. And not because I get motion sick or anything.. but because I can’t stand not paying full attention to the road even though I’m not the one driving. As annoying as it is for my husband (he should be used to it by now), I am totally a backseat or passenger, in this case, driver. You could be the best driver in the entire world and I would still want to stare directly at the road in the front of us and warn you of any brake lights ahead or anyone getting over in your lane. It’s just how I am and I can’t help it. So as I’m typing away I am also glancing up every once in a while to warn him of any possibility of danger or to tell him to slow down. And now that I’ve confessed that, you probably never want me to ride in your car, ever. I can understand that.

Pesto Spaghetti Squash with Roasted Tomatoes

Spaghetti squash is like the best thing ever. I remember the first time I tried it and I knew that moment that I was hooked. It’s very rich and starchy so it’s a perfect replacement for pasta. Something I make on a regular basis for dinner is turkey meatballs with spaghetti squash. Even though it’s probably one of the easiest meals I’ve made it’s definitely one of the best ones. You can basically just throw together what you have in the fridge with some spaghetti squash and chances are it will turn out awesome. I posted another great spaghetti squash recipe a while back if you want to check that one out too. And I’m sure there will be many more to come..

Greek Chicken Burgers

Is it really Wednesday already? This week has completely flown by and I find myself laying in bed trying to get this post done before I go to sleep tonight because I just realized what day it was.. that’s the kind of week it’s been. I was in Florida for the past 6 days with a bunch of friends for the Disney World Marathon. It was a blast!!! If you read my last post I talked about how I was nervous to run the half marathon because I hadn’t trained one bit. I actually did much better then I expected! All I know is I’m glad it’s over and I kicked butt! A majority of the group ran the full marathon and it was their first one. I’d love to run a full marathon some day but I think I just need to get over the mental aspect of it. I mean 26.2 miles?! That’s far. That’s even a far drive in my car!
