Sometimes a chocolate craving hits you so hard you drop everything to go make the most chocolately (not a word, I know) muffins you can think of while still trying to keep them healthy. So that was honestly the inspiration behind this recipe.. a really severe chocolate craving. These are basically banana chocolate chip muffins but with cocoa powder for extra chocolately goodness. I’m just going to keep pretending like that’s a real word.

Banana Blueberry Walnut Muffins
Are you tired of muffins yet? I should probably lay off on all of the muffin recipes but it’s just so hard because they’re so fun (and easy) to make! And I’ll just be honest and admit that I just really love muffins. I also love making them with ripe bananas because you don’t really need to add much sweetener since the bananas give off so much of the sweetness. I thought it would taste weird to combine banana and blueberries in a muffin but it actually is a great combination. My favorite go-to muffin is banana chocolate chip but in an effort to be healthier I reached for the fruit instead. The toasted walnuts really add great flavor as well. So overall just a really yummy muffin!
Ground Turkey and Cabbage Skillet
I tried really hard to make this dish look pretty but it just wasn’t happening. I honestly considered not even posting the recipe since the photos make it look like a big bowl of mush. But we all know that looks can be deceiving and that’s definitely the case with this one.
Paleo Pumpkin Pie
I realize this blog post is long overdue.. and I apologize. My goal is to post a new recipe once a week but sometimes life gets the best of me and I can’t seem to find the time! Actually, I tried to finish this post a few days ago but the squarespace site was having issues so I’m just going to blame it on that.. With that being said, I’m making it a solid goal of mine to make sure I post at least once a week if not more. I’m still getting the hang of this whole blogging thing so cut me some slack will ya! Just kidding I think I give myself a harder time than anyone else does.
Spaghetti Squash with Chicken Sausage, Spinach and Sundried Tomatoes
So I really tried to come up with a shorter, catchier name for this dish but just couldn’t do it. So Spaghetti Squash with Chicken Sausage, Spinach and Sundried Tomatoes it is.. I mean I didn’t want to leave out anything? Feel free to comment with your suggestion if you have one. It’s gotta be better then what I came up with.

Maple Pecan Roasted Sweet Potatoes
Ok guys… it is officially my favorite time of year! It may not feel like it outside in this low-country humidity but I know the cooler weather is right around the corner and I cannot wait. Don’t get me wrong, I love summer especially since we live by the beach but there is just something about fall that does it for me. I enjoy running and it is near impossible to run in the summer months in the Charleston heat. I mean I do it anyway but not as often and when I do, I want to die. When fall rolls around, I can start running more and actually enjoy it. Lately I’ve been running around my neighborhood but that’s been getting pretty boring so I’ve been on the lookout for new spots. A couple weeks ago my husband and I discovered this trail that’s only 10 minutes from us. It’s called the Daniel Island Waterfront Park and the views are spectacular. I can only imagine how much prettier it will be when the leaves change colors. My favorite part of the trail is the long bridge that overlooks the Wando river.
